each black line is the end of the run.
this was from a 200 ltr sour mash minus room for the corn.
at the start of each run,1.5 cups of foreshots was taken. [total 6 cups]
thats more than necessary but always safe than sorry.
top drum:just over 85%
bottom drum:just under 85%

but who cares....theres better than 20ltrs there....[better than 60 ltrs proofed down.]

Haven't done any ciders but I've done a few "Apple Pies".

It should be very similar, assuming you can get decent quantities of pear juice at the store (never looked).

My basic recipe:

1 US gallon of Apple Juice
1 US gallon of 'soft' Apple Cider (which is basically cloudy apple juice, 'soft' means no alkyhol)
3/4 cup brown sugar
Mix and heat so it reduces down a little, no need to boil it or anything silly
Put into jars with a stick of cinnamon (I use half sticks in quart Mason jars) or add whatever spices you want
Add the 'shine to the jars last (so the alkyhol doesn't burn off) and quickly cap. Some suggest adding the 'shine while it's on the stove...a waste of alcohol content.
Let cool, then refrigerate.

I find you need to go at least 33% shine to whatever jar you use, you need to taste the shine or it'll be piss weak.

Sip slowly...it tastes real nice and will creep up on you with a sledgehammer.

One quart will be enough for most adults...or you'll want a quiet Sunday morning like I did.

I tried some real cider once (pommy from memory) and thought it absolute crap. US hard cider is a different story.

This is a pretty good (and funny video) on how to make apple pie.

I'm not sure how much they sampled before rolling the camera...

Following a recent alkyhol fooled discussion....

You're doing it right with the T500. ABV is higher but for a smaller yield. Expect 2-3L tops. Pots are different.

I've only got one jar of apple pie left and the shine reserve is starting to run low.

aint that a bitch
im one drum [20ltr] out of a 60ltr rum with about 15 ltrs of 37% still in the cupboard
theres one drum taken out of the 60 ltr bourbon
i think theres 120 ltrs of bourbon in the cupboard againg
and about 37 ltrs of mango/grape brandy
i think theres a drum of 85% sour mash with oak in it thatll need a good shake up aswell
i forget what else is there
