Whole Fried Snapper Recipe

Post by Rabbitz »

Hi Gurus of the piscatorial world.

I have had a smallish (bit under a kilo cleaned) snapper land in my fridge.

I need a recipe for whole deep fried fish.

I was thinking to score both sides several times, rub in salt, pepper and fresh chilli, dust with flour and slip it into a shallow pan of oil, three or four minutes each side.

Am I close?

Yep.

I used to do it similarly, except I would put the dry ingredients (flour, salt, pepper, etc.) into a freezer bag, rinse and wipe down the fish and then drop the fish into the bag, and then inflate the bag. Hold it closed with one hand and shake it to coat the fish with the dry mix.

Enjoy!

Funny this thread turning up, my little sister cooked us a nice 4 1/2kg snapper whole for dinner last night, I could have eaten the whole lot myself. :D
