What knife do you use
would like to know what knife you fella's are using to do your skining looking for a knife to skin rabbits

Mate for most of my skinning its the little Kershaw folder you see in the pic......
for sheep and anything bigger its the yellow 'Pride' that came from NZ.

I'm more of an "odd" knife collector than a user; have been a member of the AKC for fifteen years now, and for financial reasons only pick up/buy something I like when the finances can stand it (as long as the "Boss - dearoldMum" doesn't find out), and I'm now tending to focus on guthook (skinning) knives.
There are a couple more on the way from WA right now, one Spyderco (more multi-purpose than skinning) and a guthook version of the Canadian Grohmann RK4. I'll try to sort out getting a digital camera and post photos if you blokes wish; do the same with rifles too, maybe... Let me know if you're interested.
some of the "Damasteel" stuff that's becoming available now is bloody amazing, interesting blade shapes and the patterns of the damascus is truly beautiful; lots being produced by Aussie custom makers from all over the place

It's amazing how many different knives there are about and the variety that people use. My local gunshop must have 100 on display ranging from little folders to bayonets ...and everything in between.
I think the trick is find something that's suited to your hand size and keeps a nice edge but is easy to sharpen, don't go too big, a 2" blade is plenty Whatever you buy get one that locks open well if a folding type or you may get a nasty surprise.
When skinning bunnies and hares for meat we used to just grab a handfull of skin on the back, cut across the back bone and then rip it off in two halves, break the neck and twist the front bit off, tear the skin down to the 'ankles' and either hack it off wth a cleaver or cut them off on an abrasive wheel in the bench grinder. Worked a treat and was really quick. Gut them last or you will tear the belly flaps off them but
I use an Old Timer Stockman for bunnies.
A Shellham super sport folder for foxes and bigger stuff like goats.
A Montana fixed blade for a pig sticker and the bigger stuff like chopping jaws off or hacking the scull cap off a goat. Though I have a folding pruning saw for that now.
For meat prep Green River butchers knives.
Just brought the young bloke a Chinese fixed blader called a Fury, $20 bargain if he don't loose it

Get a knive(s) with the best steel you can afford and a good steel or diamond hone for touching up in the field.

i quite like using the bottom black one for skinning small game and the middle black one for bigger game. still yet to christen the nice red handle one.

for butchering i bought the white plastic grip knife set the ssaa sell. i think the brand is tramonti or something. I havn't used them a great deal but they seem to hold their edge well and clean up easily.
I just use a small Excalibur brand folding knife for rabbits but it is a serated/scalloped edge which i generally don't like but it is still really sharp and does the job

for the little amount of skinning and butchering that I've done on roos I used swibos or before I got any of them I used mums victoronox kinife from the kitchen, she was pissed off when she found out but

I pickep up my current skinning knife while in the USA for $19.00 US a Buck OLD TIMER back here they sell for $100.00 and it is great as it is reasonably compact holds a good edge and sits on the belt really well

I have a friend in NZ who makes knives professionally and he gave me the blade semi finished (shaped and heat treated etc) It wound up being used as a gardening implement by my wife, so I rescued it and fellow Ausvarmint member, JINDYDIVER finished it with Gidgee wood and the brass hilt. It is a great shape to use and keeps it's edge beautifully.
Here's a pic of what the same shape looks like when finished with a Damascus blade by my Kiwi mate, not a lot different which says a lot for the finished product from Jindy!!
